At first glance, something simple, but it brings a sense of carelessness iiiiii … autumn mood. It takes us back to our childhood in the village. Our recipe is of the “quick, easy, delicious” type, of course 😊
If you are staying with us during the autumn-winter period, take a Saturday morning walk to the village market. From it you can buy different varieties of pumpkins, as well as other home-grown products.
After you have found the pumpkin, we proceed to its preparation.
How to prepare the pumpkin?
We wash her. We cut it into quarters. We clean its inside. We whiten the skin – with the help of a peeler – it is very easy. We cut the pieces several more times so that uniform long pieces are obtained. Then we cut each piece into smaller pieces and move it to a baking tray. It would be nice not to mix the row – that way we will both collect more, and then we will be able to serve it beautifully. We sprinkle sugar on top, according to our taste. Place a 5mm layer on the bottom and bake in a preheated oven for about 30 minutes. We turn it off and leave it in the oven a little longer.
Recipe 1: Roasted Pumpkin
Let it cool completely and before serving, garnish as desired – with honey, walnuts, cinnamon, raisins. Or with everything at the same time 😊 Or with nothing 😊. It turns out super tasty either way. And the pieces are so conveniently prepared in advance that they jump on the fork by themselves.
Recipe 2: Pumpkin mousse
Mash everything together until a uniform mixture:
2 tsp of the prepared roasted pumpkin
½ tsp hazelnut tahini,
with ¼ tsp. honey
Serve in a tall glass.
